During the summer I like to keep my cooking easy but lately, I’ve been a little bored of my go-to recipes.

Typically we stick with turkey burgers (with feta and basil), chicken sausage, or stir fry. Sides are usually roasted veggies and quinoa. It tastes good, Spencer likes it, but I am really ready for some new inspiration.
So I look to you guys. What are your favorite recipes? Entrees and sides. What are the best sites for recipe inspiration?

  1. I was never really that into okra, but I have recently become obsessed with this recipe. So simple, so tastey, and lots of vegetables! I serve it with lima beans and a piece of cornbread because I try to cut back on meat, but it would be a great side for any kind of meat or fish. The recipe makes a good serving so you can save leftovers in the fridge and heat them up quickly!   2. We also love turkey burgers – if you want to stick with turkey as a lean meat use ground turkey for making tacos (so good!! fresh avocado, cheese, other veggies, yummm).
    Whole Foods has some great (healthy!) sweet potatoe fries that are always a quick and easy side.
    Roasted brocolli (or asparagus) with a little bit of EVOO and salt/pepper in the oven at 400* for about 12 min is one of my favorite sides!

  3. I have to say I’m a bit biased to my own recipes. Of course my photos may not be as pretty as the ones above, but I promise I never post a bad recipe. :) If I don’t LOVE it, I don’t see the point in sharing on the blog. I’m pretty sure you’ll love it either way since you mentioned feta and basil. ;)

    This isn’t a very summery dish nor is it healthy, but we love Paula Deen’s cheeseburger meatloaf. It’s amazing!

    I also love The Pioneer Woman and she has some awesome recipes.

    My go to dish is Honey Mustard Pounded Chicken. Start by tenderizing your chicken breast with a mallet (I always do this no matter what dish, but you should when making this dish). I put the chicken in a pan with a little EVOO, then in another pot I put the honey mustard and mushrooms in together. You can use fresh mushrooms or the canned mushrooms. For the honey mustard you can either make your own or use Otts Honey Mustard Dressing. I always make my own… you can google it for the recipe. In another pot I make some rice. When the chicken is done cooking you can add in the honey mustard and mushrooms, continue to cook for a little bit longer then serve over your rice. You can cut up the chicken breast, butterfly it, or leave it as is (I usually cut it up or butterfly it, but that’s just me). My husband loves this dish and it’s so easy to make and fairly healthy too.

    We made the poached salmon with the cucumber salsa yesterday and enjoyed it. Flipped through the rest of the blog and it looks like they have some great seasonal recipes.
