Strawberry Lemon Mint Granita

I really love to cook. The problem is, I am not a huge fan of recipes. When I am following along with something I envitably mess up. So I like to experiment and keep my fingers crossed.
The other night I had a couple girlfriends over for dinner and decided to make a granita for dessert. First, because my diary free life (depressing) doesn’t allow for ice cream. And second, because its 6,000 degrees and we all needed something refreshing! Third, and most importantly, its too easy not to try.
It turned out absolutely delicious so I thought I would share the recipe with you lovely people.
First use three lemons and squeeze out as much juice as you can. Then finely chop up 2 tablespoons of fresh mint.

Put two cartons of fresh strawberries and as much or as little sugar as you would like in a food processor. Add a half a cup of warm water and blend. Then add the lemon juice and finely chopped mint.

Pour the mixture into a Pyrex dish. Place in the freezer for 3 hours or more.

Take out of the freezer and scrape with a fork.

SERVE!
It turned out absolutely amazing. So delicious and refreshing. You can make it as tart or as sweet as you want and can you use any fruit you like. Hope you enjoy!

  1. I’m all about the easy recipes. I have an explicable fear of knives that keeps me from getting down with my cooking. Following recipes sometimes makes the food making process longer, so I go for the ones I can remember most.
